Mold toxin can cause liver damage
Aflatoxin is a mold toxin that can damage the liver and even cause liver cancer. “Aflatoxins are mycotoxins formed by two types of molds of the genus Aspergillus”, states the website of the EFSA (European Food Safety Authority). Mushrooms are mainly found in regions with hot and humid climates.
The Food Safety Agency predicts that climate change will affect the presence of aflatoxins in food in Europe. “Since aflatoxins have been shown to be genotoxic and carcinogenic, their food intake should be kept as low as possible,” says EFSA. (abl)
